Weight Watchers Zero Point Asian Vegetable Soup

 

 

 

This light, tasty zero-point soup has a little zing from the ginger, and a crunchy texture addition from the water chestnuts.  The image and recipe is courtesy of Weight Watchers UK.

 

 

 

 

Ingedients for zero point Weight Watchers Asian-style Vegetable Soup

140 g pak choi (or bok choy in other places)

150 g cabbage

3 cloves garlic

20 g ginger

100 g mushrooms

100 g spring onions

140 g water chestnuts

1 medium Pepper, red

1440 ml fresh stock

70 g beansprouts

200 g mange tout (also called snap peas, or sugarsnap peas)

2 tablespoon soy sauce

25 g fresh coriander

 

Put pak choi (bok choi), Chinese cabbage, garlic, ginger root, oyster mushrooms, spring onions, water chestnuts, pepper and vegetable stock into a large soup pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer, partly covered, for about 10 minutes. Toss in beansprouts and mangetout (snap peas) during the last 3 to 4 minutes of simmering (for crunch).

Add soy sauce and coriander. Serve.  Enjoy ... for zero points!
