Weight Watchers Zero Point Italian Vegetable Soup

 

 

This is a zero-point soup, as described with ingredients below.  The image is courtesy of Weight Watchers UK, who advise that if you want to bulk this soup up just a touch, you can sprinkle two teaspoons of parmesan cheese into and over this tasty soup for the princely sum of a single Weight Watchers point.

It's up to you if you want to spend the point.  If not, enjoy the fabulous taste and filling quality of the basic soup for no points at all.

 

 

 

Ingedients for zero point Weight Watchers Italian Vegetable Soup

2 cloves garlic

160 g onion(s)

40 g spinach

2 medium courgette

2 sprigs of fresh thyme

1 teaspoon oregano

1 medium Pepper, red

1 medium portion fennel

2 portion stock cube

3/4 teaspoon salt

1/4 teaspoon pepper

25 g parsley

25 g basil

Put the chicory, garlic, onions, spinach, courgette, red pepper, fennel bulb, vegetable stock, chopped tomatoes, red pepper flakes, thyme and oregano into a large soup pot. Cover and bring to a boil over high heat. Reduce heat to low, and simmer, partly covered, for about 10 minutes.

Stir in salt, black pepper, parsley and basil. Serve.  Great recipe!  Go for it!  Go for goal!
